Classic Almond Biscotti for Christmas Gifts!

My hubby loves these. He asked our daughter to make them as a gift for this Christmas season, that is how much he likes these. My daughter and I are chocolate fans so we prefer the Hot Chocolate Biscotti I recently wrote about but these are just as amazing.


My daughter sourced this recipe. It is from Canadian Living issue July 2005, she adapted it slightly. I know you will like it. It is, again, a perfect recipe for the holidays. Make the Hot Chocolate biscotti and this Classic Almond biscotti, put a gift bag together for loved ones--gifting for the season is done!

Ingredients:

1 3/4 cup all-purpose flour
2 teaspoons baking powder
3/4 cups whole almonds
2 eggs
3/4 cup sugar
1/3 cup butter melted
2 teaspoons vanilla
1/2 teaspoon almond extract

Method:

In a large bowl combine almonds, flour, and baking powder. In a separate bowl whisk together eggs, sugar, butter, vanilla, almond extract; stir into flour mixture until soft sticky dough is formed. transfer to a lightly floured surface and form into a ball. Transfer to a parchment-lined baking sheet, divide into two logs. Flatten slightly.

Bake 350* for 20 minutes. Remove and let cool enough to handle. Transfer to a cutting surface and cut into 1" strips. Stand the cookie up and bake again on the parchment lined sheet for another 20 minutes until lightly browned. Transfer to a rack and let cool. It stores in an airtight container for 2 weeks.

We made a light icing and drizzled it over the cookies, I liked the addition.
